Having stressed the importance of pickles, we must now add that most pickles served in Japanese restaurants and sold in Asian food stores are probably the most adulterated of all foods. They are dyed, sweetened with refined sugar, and pickled with commercial salt, synthetic vinegar or soy sauce, and preserved with various chemicals. The good news, however, is that some truly delicious and natural Japanese pickles are available in the Mitoku label.
