At the tip of the southern-most island of Japan lies Kagoshima. From the active volcano Ontake clouds drift up over this rough isolated land, covered with lush tangled jungles of wild kuzu. Kuzu is a tenacious vine that only the Japanese seem to have tamed. Dug by farmers, its root is pounded and washed to separate the valued starch from the fiber. Then it is left shaded in the winter air to dry. Kagoshima Authentic Kuzu Noodles are the only kuzu noodles made with 100% real kuzu. They are delicious and great fun, adding a unique touch to one-pot favorites like nabe and sukiyaki. They're delightful deep fried and go well with most traditional meals. They make wonderful transparent salads as well.
Mitoku Bifun is a wheat-free traditional Chinese-style noodle. Light and versatile, Bifun is great in noodle salads, clear soups, or stir-fried with tofu, tempeh, or seitan and fresh, seasonal vegetables. Just add a sprinkle of tamari or shoyu and a few drops of Hot & Spicy Sesame Oil for an authentic Oriental flavor. Unlike most other Bifun noodles on the market which have potato starch added, Mitoku Bifun noodles are made with 100% rice.
