Goma means sesame and shio means salt. Eden Gomasio is low sodium sesame salt, a condiment of organic roasted sesame seed and Eden Sea Salt. Eastern cultures do not put straight salt on food. Eden Gomasio sesame salt is whole roasted organically grown tan sesame seed ground with Eden sea salt. The seeds are natural gas, infrared, dry roasted releasing their oil then slowly ground with oven roasted Eden Sea Salt.

Gomasio is traditional sesame salt used for centuries in Japan. Goma means sesame, and shio means salt. In Eastern cultures raw salt was rarely used on food. Condiments such as gomasio were used at the table. When hot sesame is ground with salt the seed's oil coats and melts the salt, melding and mellowing it for full flavor with less salt consumption.

The patriarch of macrobiotics, George Ohsawa, recommended gomasio in the 1960s as a replacement of raw table salt. This popularized gomasio throughout Europe and the Americas as the healthy alternative. Mr. Ohsawa's wisdom is especially meaningful as most Americans consume, and have consumed far too much sodium.

Including sesame with meals provides high quality protein, calcium, iron, and a superior range of amino acids including methionine, tryptophan and lysine that are often missing in vegetable protein sources. Sesame Sesamum indicum is the oldest known herbaceous plant grown for its seed. It originated in Africa where it is known as 'benniseed' and 'sim-sim'. Used throughout prehistory sesame was an important food in Mediterranean and Eastern civilizations, and continues to be so today. Greek and Turkish soldiers carried them in their rations. The Egyptians milled sesame for a flour used in breads and many dishes. The Romans ground them into paste to spread on bread. The expression 'open sesame' indicates entrance into splendor and abundance. Sprinkling gomasio sesame salt on food imparts abundant, rich flavor.
